Had no such qualms myself.Privately she confided a fondness for Gateau St. Honere, which I shall not divulge.Just in case you are unfamiliar with this heavenly confection I am describing it here.This classic french dessert is a circle of puff pastry at its base with a ring of pte choux piped on the outer edge. After the base is baked small cream puffs are dipped in caramelized sugar and attached side by side on top of the circle of the pte choux.This base is traditionally filled with crme chiboust and finished with whipped cream using a special St. Honore piping tip.Splendid stuff!Gedenspire, Captain, 11th Hussars, Prince Albert's Own
